Bill’s take on Nigella’s Clementine cake This recipe is loosely based on Nigella’s Clementine cake, it has evolved over the many times I’ve made it. Started out as a single sponge, but I always had too much batter for my cake tin, so I used two sandwich tins and put cream in the middle. Then I got an inspiration and decided to base the cake on a Margarita cocktail, the ingredients of which are Tequila, lime and triple sec.
